Peach Dumplings

2 whole large peaches ( I bet you can use canned peaches as well if you don’t have fresh)
2 8 oz cans crescent rolls
2 sticks butter
1-1/2 cup sugar
1 tsp vanilla
cinnamon, to taste
1 1/2 cups orange juice

Peel and pit peaches. Cut both peaches into 8 slices. Roll each peach slice in a crescent roll. Place in a 9 x 13 buttered pan.
Melt butter, then add sugar and barely stir. Add vanilla, stir, and pour entire mixture over peaches. Pour orange juice around the edges of the pan. Sprinkle with cinnamon and bake at 350 degrees for 40 minutes. Serve with ice cream, and spoon some of the sweet sauces from the pan over the top.



Pretzel Brownies with Salted Caramel
These are sweet, salty, crunchy and oh so chocolaty!

1 1/2 cups flour
1/2 cup sugar
1/2 cup brown sugar
3/4 cup chocolate chips
3/4 cup unsweetened cocoa powder
1/2 tsp baking soda
1/2 tsp sea salt
2 eggs
3/4 cup water
1/3 cup oil
2 tsp vanilla
3 cups lightly crushed pretzels I crushed mini twists, small and large pieces are fine)
salted caramel sauce to top brownie or use by itself! (recipe below)

Heat oven to 350 degrees. Grease a 9 X 13 inch pan. While oven is preheating Mix in a large bowl flour, sugar, chips, cocoa, baking soda and salt till well blended.
In a small bowl mix eggs, vanilla, water and oil. Add this wet mixture to your dry ingredients and mix until smooth. The mixture will be thick. Pour 1/2 batter into prepared pan and then evenly cover with pretzel pieces pour remaining batter over pretzel pieces and bake for 30-35 min. until done. Let brownies cool before cutting. Top with warm salted caramel sauce and enjoy this treat! While brownies are cooling cook your caramel sauce.

Salted Caramel Sauce
1 cup half and half
1 cup brown sugar, packed
3 tbsp. butter
1/2 tsp. sea salt
2 tsp vanilla
In a small pan over med. low heat add butter, sugar, half and half and salt and stir gently for 6 minutes sauce will thicken as it cools. Add vanilla and stir for 1 more minute then remove from heat. Allow to cool a little bit and pour oven brownie! I cut the brownie into squares and then pour caramel over one at a time, not the whole batch! Yum! Enjoy!



Radish Chips *

10 or more large Radishes ( I used 12 large for 4 servings)
Salt and pepper
Olive oil cooking spray

Pre heat oven to 375 °.  Slice radish thin.  Line baking sheet with foil and spray with cooking spray.  Arrange radishes in a single layer and lightly coat with a dusting of cooking spray and add salt and pepper to your liking.  Bake for 15 minutes and turn over and bake for another 15. Let cool.  ENJOY!!!!!

*For the Crust :
1 1/4 c. flour
1/4 c. sugar
pinch of salt
1/2 c. butter (room temperature..very important)

*For the cream cheese whippy layer:
1 c. heavy whipping cream
8oz of cream cheese.. (room temp.)
1 1/4 c. powdered sugar
1 tsp vanilla

*For the strawberry topping:
3 cups of sliced strawberries
1/2 c. powdered sugar
2 tsp. cornstarch
3 drops red food coloring

To make your crust.. Preheat oven to 325…. mix your flour, sugar in a med. bowl…
cut in the butter until crumbly.. then quickly combine mix it with your hands until it forms a dough… its ok if its a bit dry…. press evenly onto bottom and sides of 9″ pie pan… don’t press to hard.. bake for 20 to 25 min. Cool Completely

To make the cream cheese layer: 1st whip your heavy cream until stiff. … then set it in the refrigerator…In another bowl.. cream your cream cheese and 1 1/4 cup of powdered sugar until smooth.. 1 to 2 min…blend in vanilla…Fold the whipped topping in…***VERY IMPORTANT…Try not to eat it all.. ya it’s that good…put the mixture in the cooled pie crust and smooth.. refrigerate.

To make the strawberry topping… mix the sliced strawberries and 1/2 cup powdered sugar… Let Stand 30 min…. drain the juice.. SAVE it…. you need 1/3 cup if not enough add some water.. In a small sauce pan put juice, cornstarch and red food coloring… stir constantly till thickens…remove from heat… cool completely.. then combine with strawberries..

You can spread on pie now or wait till serving.. leave a bit of an edge so you don’t make the crust soggy….



Pea Salad

2 cans peas
3 or 4 hard boiled eggs (chopped)
3 or 4 medium sweet and dill pickles (chopped)
1 medium onion (chopped)
2 cups diced cheese
3 or 4 chopped pimentos
1 tsp salt
1 tsp pepper

Drain juice off peas and add all ingredients in order.
Mix in a small bowl:
3 TBSP mayonnaise
1 TBSP mustard
1 tsp sugar
Fold into other mixture.
Chill (Salad is better after several hours chilled, make early)



Frozen Pumpkin Cheesecake Bars
(Low Carb, no sugar added)

1/2 cup butter
3 ounces cream cheese
1/2 cup pureed pumpkin
4 tablespoons Truvia or desired sweetener
2 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon pumpkin spice
1/8 tsp salt
Chopped pecans

Melt butter over medium high heat, stirring often. Add pureed pumpkin after butter has melted, keep whisking, and add cream cheese, sweetener, and spices.
Whisk until smooth, and then add vanilla extract.
Mix completely and remove from heat. Line a 9×9 pan or dish with wax paper and pour fudge mixture into the pan.
Sprinkle with pecans if desired and place in the freezer for 24 hours.
When ready to slice, remove the fudge by pulling out the wax paper and cut into pieces.
Store fudge in a container with a lid in the freezer – until ready to serve.
