BAKED GRAPEFRUIT

Have you ever baked a grapefruit???
OMGosh THIS IS SOOOOOO GOOD!

Ingredients:
1 grapefruit halved and seeded
A very small amount of brown sugar and cinnamon mixed together ( I use the Coconut Palm Sugar )

Directions:
Use a knife to separate the grapefruit into sections.  Sprinkle the brown sugar and cinnamon on top.  Bake at 350 for 12 to 15 minutes or until top has formed a caramelized crust.  ENJOY!!

ELVIS PANCAKES

Elvis Pancakes

1 1/4 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
2 tablespoons brown sugar
1 1/2 cups milk
1 egg, beaten
3 tablespoons butter, melted
1 teaspoon vanilla extract
1/4 cup peanut butter
1/4 cup chocolate chips
1 ripe banana, diced

Whisk flour, baking powder, salt, and brown sugar in bowl. Beat egg and milk together and stir in peanut butter until smooth in a second bowl. Whisk the milk mixture into the dry ingredients just until moistened, then whisk in melted butter and vanilla extract. Gently fold chocolate chips and diced banana into the batter.
Place a large nonstick skillet over medium heat and pour 1/4 cup of batter per pancake into the middle of the skillet. Let the pancake cook until bottom is golden brown and there are many small pinholes in the top of the pancake before flipping, about 2 minutes. Cook other side until golden brown and the middle of the pancake is set, 2 to 3 minutes. Repeat with remaining batter.

MIRACLE MEATLOAF

MIRACLE MEATLOAF

Ingredients:
2 lbs extra lean ground beef
1 lb pork sausage
2 eggs
1/2 cup of milk
1 cup cracker crumbs
1/2 tsp salt
1/2 tsp pepper
1 tsp garlic powder
1 tbsp dried parsley
1 tbsp dijon mustard
1 tbsp Worcestershire sauce
1 medium onion diced

DIRECTIONS
Add all ingredients in large bowl and mix until well combined. Spray the inside of your crockpot with pam spray. Place meat mixture in crockpot forming a “loaf”. Wrap potatoes in foil and place around meatloaf, as pictured.  Set your crockpot to low for 8-10 hours.
SUPER SIMPLE!!!

TWICE BAKED CAULIFLOWER

JUST LIKE STUFFED BAKED POTATOES

16 ounce package frozen cauliflower
8 ounce cream cheese, softened
8 ounce cheddar cheese, shredded
4 green onions, chopped then I saute them in my bacon grease!
1/4 teaspoon salt or to taste
1/4 teaspoon pepper
3 to 6 pieces bacon, chopped and fried until crisp
Paprika, optional

Cook the cauliflower until soft, about 8-10 minutes; drain very well and break up the florets a bit with a spoon. It’s also very good if you leave the cauliflower a little chunky. Put in a greased 8 x 8″ baking pan or a 2-quart casserole. Mix in the cream cheese, cheddar, green onion, salt, pepper and bacon. Dust the top with paprika, if desired. Bake at 350º for 20-40 minutes, until browned and bubbly.
