Thin Mint Cookies

1/2 Cup Ghiradelli Dark Chocolate Chips
1/2 Cup Ghiradelli Milk Chocolate Chips
1 teaspoon of Sunflower Oil or can use Coconut Oil
1/4 teaspoon of Peppermint Extract
Organic or Ritz Crackers

Melt the chocolate chips in a double boiler with 1 tsp of sunflower oil or coconut oil. You could also use shortening. Once melted, stir in 1/4 tsp of peppermint extract. Dip the crackers in and get them out of the chocolate with a fork and shake off excess chocolate. Freeze until the chocolate is set.
These are so so good….
