Chessy Broccoli & Rice Casserole (with Sausage)

Ingredients
1 cup brown rice
2 cups chicken stock, low salted
4- 6 cups, chopped broccoli florets
Spray olive oil cooking
1 teaspoon salt
1 teaspoon black pepper
12 oz chicken sausage, cut into 1 inch pieces
1 tablespoon butter
1 large onion, chopped
2 cloves garlic minced
2 tablespoons all-purpose flour
1 cup milk, non-fat
1 cup chicken stock, low salted
2 teaspoons salt
2 teaspoons black pepper
2 tablespoons light cream cheese
1 cup, shredded 2% low fat cheddar cheese

Directions
Preheat oven to 350
Spray a large casserole dish with nonstick spray, set aside
In a large pot bring 2 cups chicken stock to a boil
Stir in brown rice, cover and reduce to a simmer
Cook for 18-20 minutes, or until rice is tender
Line a rimmed baking sheet with parchment paper
Spread chopped broccoli onto sheet pan
Spray with olive oil spray
Sprinkle with salt & pepper
Roast for 15-20 minutes, while the rice is cooking
In a large skillet, with high sides brown sausage
When sausage is browned remove fro pan and place onto a plate, reserving any oil from the browning
Add butter to pan
Stir in onion and cook for 5-6 minutes, or until they begin to brown
Stir in garlic and cook for another 2 minutes
Stir in flour, cooking for 2 minutes, stirring often
Whisk in milk and chicken stock brining it to a boil, stirring until smooth and sauce thickens a little
Stir in salt, pepper, cream cheese and 1/2 cup of the shredded cheese
Let cook for another 5-10 minutes or until everything is ready
When broccoli and rice are cooked stir rice, 1/2 of the roasted broccoli and 1/2 of the sausage into cheese sauce
Pour rice mixture into prepared casserole dish
Top with remaining broccoli, sausage and cheese
Bake for 30-35 minutes or until cheese is starting to brown and bubbly
Remove from oven and let stand for 15 minutes
