Tezza’s Breakfast Frittata

4 eggs
1/2 small onion, diced
1 cup diced bacon
Large Potato, slice thin
Italian Seasoning (to taste)
Salt & Pepper (to taste)
Shredded Cheese to taste
1 1/2 Tbsp. Olive Oil

In an oven safe pan, sauté your onions and bacon pieces in the oil until tender. I did mine until they were browned, Remove from pan and then layer the pan (i used a loaf pan) layering the potatoes and bacon/onion mix. in seperate bowl scramble eggs with a little milk, Italian seasoning, salt, and pepper, pour over the top. place in the oven on 200 degrees until cooked
Cover with shredded cheese Let sit for a few minutes and cut into pieces
