Cheesy Chicken Quinoa Bake
Serves 8…Your family won’t even realize that healthier Quinoa has replaced carb filled rice.  Yummy, satisfying and a healthier alternative.

3 cups fat free chicken stock, divided
1 cup fat free milk, divided
2 garlic cloves, minced
1 tsp poultry seasoning
1/2 cup flour
1 cup water
1 cup quinoa, rinsed
2 boneless skinless chicken breasts
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp Cajun seasoning
6 oz Fancy Shredded Italian Blend Cheese [138049]
Roasted Broccoli
3 cups broccoli, chopped
1 tsp extra virgin olive oil
1 tsp Cajun seasoning
**If broccoli is not your thing feel free to use any veggie you prefer, just make sure it is cooked before adding it in

Preheat oven to 400.  Generously spray a large casserole dish with nonstick spray, set aside.

In a medium saucepan bring 2 cups chicken stock, 1/2 cup milk & garlic to a low boil.  In a medium bowl whisk together remaining 1/2 cup milk, poultry seasoning and flour until smooth.  Add flour mixture to boiling stock and whisk until smooth and thickened

Remove sauce from heat and stir in water & quinoa.  Pour sauce into prepared pan.  On a clean surface cut chicken breasts into bite size pieces.  Sprinkle with salt, pepper, garlic powder and Cajun seasoning, tossing to coat evenly.  Place chicken on top of quinoa mixture, do not stir chicken into casserole

Bake for 30-40 minutes, or until liquid is absorbed and quinoa is cooked and tender.  Stir in remaining 1 cup chicken stock and 1/2 of the cheese until smooth.  Place roasted broccoli (or other veggie you choose) on top of casserole and sprinkle with remaining cheese

Bake for an additional 10-15 minutes or until cheese is bubbling and beginning to brown.  Remove from oven and let stand for 5-10 minutes before serving.  ENJOY!

To make roasted broccoli
Line a rimmed baking sheet with foil and spray with nonstick spray.  Place broccoli onto pan and drizzle olive oil over broccoli

Sprinkle Cajun seasoning over broccoli and toss to coat.  Place into same oven with casserole and roast for 10 minutes, then toss and continue roasting for an additional 10-15 minutes or until broccoli is browning and tender.  Remove and set aside until casserole is done cooking
