Cheesy Smoked Sausage Skillet

2 large russet potatoes, washed and cut into bite size cubes
1 lb. smoked sausage, sliced
1 small onion, chopped
2 good handfuls of fresh spinach
1/2 tsp. my house seasoning (equal parts onion powder, garlic powder and black pepper…mix together and store in an airtight container)
1/2 tsp. smoked paprika
good pinch of salt
1 C. shredded sharp cheddar cheese
1 T. vegetable oil

Heat the vegetable oil in a skillet over med. high heat. Add in the potatoes and cook for 5 minutes. Lower the heat to medium and add in the sausage and onions. Cook, stirring occasionally, until the potatoes are tender (about another 10 minutes). Add the spinach and seasonings, stir until the spinach has melted. Sprinkle in the cheese and stir to melt. Serve nice and hot.
