2 Cups Flour (more for rolling out dough)
2 tsp. ground ginger
1 tsp. ground cinnamon
½ tsp. ground nutmeg
¼ tsp. ground cloves
¼ tsp. baking soda
¼ tsp. salt
½ cup margarine or butter, softened (but NOT melted)
1/3 cup brown sugar (packed)
1/3 cup molasses
1 egg (I use large)

Stir together flour, spices, baking soda and salt in a large bowl and set aside. Cream margarine with brown sugar until smooth. Beat in egg and molasses. Slowly add the dry ingredients and mix until a soft dough. I put the dough in a large ziplock baggie and put in the fridge for about an hour or so.
Flour surface and rolling pin, roll out dough and cut using your cookie cutter. Bake at 350 for 10 to 20 minutes – til edges start to darken a little. Cool completely on wire racks. Enjoy!!
