GLUTEN FREE PUMPKIN MUFFINS
Gluten Free Pumpkin Spice Muffins are so good that you won’t even know they’re gluten free. These also freeze very well.
1 1/3 cup G.F. flour
1 teaspoons pumpkin pie spice (combo of cinnamon,nutmeg, clove)
1/4 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1 cup honey
2 eggs (I used 2 tablespoon freshly ground flax w/ 6-7 tablespoon hot water)
1/2 cup coconut oil
1/4 cup cold water
1 1/4 cup pumpkin puree
Preheat oven to 325
1. Mix dry ingredients then add wet.
2. Grease or line muffin tins and fill 3/4 way
3. Bake for 40 minutes and check with toothpick
Garnish with powdered sugar or a drizzle of melted chocolate (3 tablespoons) with coconut oil (1 tablespoon). I use a double boiler to melt the chocolate then add the coconut oil: drizzle of melted chocolate (3 tablespoons) with coconut oil (1 tablespoon).
