My friend Tiffany’s Italian Stuffed Green Peppers recipe.  I like to make a double batch of these and freeze half for a fast dinner on another night.

1 lb 93/7 lean ground beef or turkey
6 bell peppers
1 can Hunts diced tomatoes
4/5 regular cans Hunts tomato sauce
1 heaping tablespoon minced garlic
2 cups Minute Rice
1 teaspoon dried oregano
Salt and pepper to taste
Parmesan Cheese

Preheat oven to 375 Degrees
Brown meat with garlic and salt and pepper to your liking.  Prepare Rice while browning meat.  Set aside

Roast uncut peppers on stove top gas burners (this works with electric coil ranges a well, not sure about flat top)this will help cook the peppers and add extra flavor.  Once the peppers are brown and blistered you can choose to either cut in half and pull out seeds or leave whole and remove just the tops and seeds.

In large roasting pan cover with foil for easy clean up, pour in 1-2 cans tomato sauce And arrange peppers side by side.
In large bowl ,mix meat , diced tomatoes , oregano and rice together..add 1-2 cans tomato sauce, depending on how saucy you want your peppers to be..add more salt and pepper if you’d like.

Stuff peppers evenly with all of meat and Rice mixture.  Pour tomato sauce over the top of peppers and cover with foil.
Place in oven until pepper is as tender as you’d like and peppers are heated through.  May be anywhere from 45min to an hour and a half depending on whether or not you have whole peppers or half peppers. Sprinkle with Parmesan cheese.
