Peach Cobbler (done right) – 5 WW + points
Serves: 12

6-8 fresh peaches (depending on size) – peeled and cut into small-medium size pieces
⅔ cup sugar
2½ Tbsp cornstarch
3 Tbsp lemon juice
⅛ tsp salt
1 cup all-purpose flour
¼ cup sugar
2 Tbsp cornstarch
½ tsp baking powder
⅛ tsp salt
6 Tbsp chilled butter, cut into small pieces
½ cup half & half

Preheat oven to 350
Lightly spray 13×9 inch baking dish with cooking spray
To prepare the filling
Gently combine peaches, sugar, cornstarch, lemon juice and salt in a medium bowl
Let sit in bowl while you prepare the topping
To prepare the topping
In a medium bowl gently combine flour, sugar, cornstarch, baking powder & salt
Cut butter into flour mixture with a pastry cutter or 2 knives until mixture resembles course meal
Add half & half, gently combine until just moistened
Pour peach mixture into prepared baking dish in an even layer
Drop dough by spoonfuls evenly over top of filling (I made 12 “crust dumplings” so each serving receives 1 piece of topping)
Bake at for 50-60 minutes or until topping is browned and filling is bubbly
Each serving is only 5 WW+ Points!! Add some fat-free vanilla ice cream, frozen yogurt or whip topping to make it extra special
