POACHED PEARS

Poached Pears with Ice Cream

3 whole pears, washed
1/2 T. butter
1 C. 100% cranberry juice
1 T. balsamic vinegar
vanilla ice cream

Slice the pears in half, lengthwise, and scoop out the core. In a skillet, melt the butter over medium high heat and place the pears in the skillet flesh side down. Add in the cranberry juice and balsamic vinegar, bring to a boil and reduce heat to medium. Let cook for 8-10 minutes, spooning some of the juice over the skin of the pears as it cooks. Remove from heat once the liquid has reduced and thickened. Be very careful when removing the pears, I have a blister from where I accidentally touched the flesh of the pear. Plate the pears and serve with a scoop of ice cream where the core was. Serve immediately.
