STUFFED BELL PEPPERS
Cheese & Rice Stuffed Bell Peppers. Another one of my favorites from Mom’s recipes.
You will Need:
6 med. peppers
1 1/2 lbs of ground beef
1 med. onion
1/2 tsp salt
2 cups of shredded cheddar cheese
2 1/2 c. of chopped tomatoes
1 1/2 cup of cooked rice
What you do:
*Cut tops of peppers and remove seeds, rinse well…cook in boiling water for 8 min.
*Meanwhile cook your ground beef with your onions and salt…drain.. then add your cheese, chopped tomatoes and rice.. stir well
*drain your peppers and then stuff with meat mixture… place in a baking dish and bake at 350 degrees for 20 min.
